After the bug freak out, I headed to get more hay for the cold days ahead.... the drive was super foggy which made for a beautiful drive! I love driving my truck!! Just love it!! She has no radio, so it's my perfect peaceful little place.
I came home after the hay run and had a little lunch before finishing up at the farm...leftover blackeyed peas and cornbread on a chilly day...mmm-mmm! Simple but so satisfying!!
Since the goats and the sheep share the same shelter, I decided that since it was going to be terribly cold and possibly snowy (!!!!!), I would throw something together so they could have their very own space.....tada! I had to let the babies in there to show the sheep there was nothing to be afraid of.... the sheep were not really into this new 'shelter'.....
...of course, I forgot my gloves (they were in my CAR, and today I drove my truck) and my hands took a beating....but luckily my hands are used to it.
Yay! Finally just before dusk, the sheepsies decided to give the shelter a go....
when I got home, I made the very first 'Sandi's Sweet Stuff Sunday' dessert of the year: Chocolate Icebox Pie... Here's what you will need:
2/3 C milk
3/4 C semi sweet chocolate chips
1 can sweetened condensed milk
2 T cornstarch
1 t vanilla extract
1/4 C water
3 T butter
3 eggs, beaten
Pour the milk into a saucepan and put on the stove on medium heat just until the milk starts to bubble around the edges, then turn the stovetop off....
stir in your chocolate chips....
stir or whisk vigorously until it is blended well (I couldn't find my whisk, so used my handheld mixer thing-a-majig instead)
then mix your cornstarch and water together and add to mixture with the eggs, condensed milk, and vanilla extract. Bring to a boil and keep whisking for about a minute until it thickens, then remove from heat - don't overcook...
add your butter - I cut the 3 tablespoons into several pieces for faster melting....
1 Box Schar GF honey grahams
6 T butter
melt the butter, crush and grind the graham crackers (I used my trusty ol' magic bullet thingy), and mix all together and smash into a pie pan.
then pour your chocolate mixture into the pie crust and pop it in the fridge for a few hours....
.....poor Baby always thinks I am going to drop whatever it is I am working on... she is ALWAYS starving ;)
For the whipped cream, pour the 1 C heavy cream into a bowl and start to mix on high with a handheld blender, slowly add the sugar..... after it starts to get really fluffy and light (this seemed like FOREVER, but I'm betting it was a couple of minutes), take your pie out of the fridge and top it with the whipped cream.....
I also grated up a chocolate bar for some added texture and sweetness!
...again, Baby is waiting......
Well, it's the end of another weekend..... tomorrow calls for snow, but no one I know seems to think THAT'S going to happen..... the temps are not going to get above freezing and the low tomorrow night is 7 degrees...eeeeek! Time to turn up the heat and pay dreamland a visit before the workweek starts! Stay warm! Brrrrr!
