This morning on my run, I passed Ike & Jane's (a local bakery/ coffee shop) and as usual the aroma of sweet, sugary goodness made me weak at the knees and craving donuts for breakfast....
Soooooo, today's sweet treat also doubles as a breakfast treat! Gluten free, baked, powdered sugar donut holes (made in a mini muffin pan)!!
This is what you will need:
- 5 T butter, softened to room temperature
- 1/2 C sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup milk (milk - I used raw goat milk but soy milk, almond, or rice are fine also)
- 1 1/2 C Cup 4 Cup gluten free flour (or all-purpose flour)
- 1 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt

- 5 more T butter
- 1 C powdered sugar
First preheat oven to 400 degrees. Then mix the 1/2 C sugar and (very soft) 5 Tbsp butter (also I used a fork to mix this all the way through, so if you don't have a mixer, this is easy!).......
Then add your egg, vanilla, and milk....
In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.....
...then add that to the butter, sugar, egg mixture and mix just until combined - don't overmix, or these won't be as fluffy...
Grease your muffin pan with butter with your fingers (or you could use a cooking spray - I always use butter), and fill each cup with mixture. This batch makes exactly 24 mini muffin donut holes....
Bake for 9-10 minutes or until they look like this:
Fill a paper bag with the powdered sugar....
...and melt the other 5 Tbsp butter in a cup or bowl (I used a wide mouth Mason jar)...
After your faux donut holes have cooled for about five minutes, drop one by one into the melted butter, swish around and then shake in the bag with the powdered sugar. Viola! Delicious baked donuts holes!!!
...and yes they were as delightfully delicious as they looked!
