Happy Valentine's Day!!!

Heyyyyy! So I am doing a little something different this year for VDay! I am going to an event this evening that is all about gals! There will be some locally brewed beers, some locally made beauty and skincare products, a braid bar by Rinse Salon, and it will be at the Indie South store in Normaltown, so all us gals in attendance can treat ourselves to some really cool gifts!

I will be there with a fresh batch of gluten-free buttermilk mini biscuits with some locally made jams and jellies from Canebrake Cottage, a few items from the Fox & the Forest's line called 'the potion', and some of Little Cuckoo chocolates! Afterwards, I will be seeing my sweetheart, but this will be a fun way to mix things up for a change!

This will be my EIGHTEENTH Valentine's Day with Christian! Of course we have our own little usual VDay planned - you know, the pig-out on delicious dessert, some bad tv, etc....

...and here is the recipe for these easy and fool-proof GF biscuits....

Each batch makes 16 mini biscuits, btw....

2 C  - Cup 4 Cup all purpose flour
2 1/2 tsp baking powder
1/2 tsp baking soda
6 tbsp salted butter (very cold)
3/4 C buttermilk

Preheat oven to 450. Combine flour, baking powder, and baking soda with a whisk (or sift it all together).

Grate the cold butter into the bowl of dry ingredients then fluff all together with a fork (or whisk). Mash up any large pieces of better so there are no huge pieces...

Add the buttermilk and mix until all is combined.

Lightly flour a surface - I use parchment paper on my countertop.....

knead 3-4 times, and press out into a square about 7" x 7" and then cut into four strips then cross cut, so you have 16 square little bits.
I then gently shape with my hands into a more round shape......
....... and plop onto a baking sheet lined with parchment paper. Pop into the oven for 8-9 minutes or until the tops are slightly golden!

Serve with butter and jam.... Yummy!
