I had a request from a tenant last week to make some soft baked peanut butter cookies. I asked what the occassion was, and she just wanted "a standard batch like what mom used to make" - She said her mom doesn't bake like she used to.... I just thought that was the sweetest request ever. Peanut butter cookies with the fork criss cross on top. Moms are awesome, and I am so fortunate to still have mine. This recipe is the same one my own mom handed down to me... <3
What you will need:
3/4 C peanut butter
1/2 C butter at room temp, super soft
1 1/4 C packed brown sugar
1 tbsp organic pure vanilla extract
1 farm fresh egg
1 3/4 C all-purpose flour
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
preheat oven to 375, then add parchment paper to a cookie sheet.
beat peanut butter, butter, brown sugar, & vanilla extract in a large bowl with a handheld mixer on medium until all blended, then mix in egg.
with a fork, kind of push the mixture to the sides of the bowl and then add your flour, baking soda, baking powder, and salt to the middle of your mixture, then fold in with fork until its all 'fluffy' looking. Now use handheld mixer to mix it all together.
now, roll into balls about 1 1/2 inch in diameter and place about 2" apart on your parchment lined cookie sheet. slightly flatten with a fork to get that signature 'mom' criss cross...
bake about 8-9 minutes and then let cool fully on cookie sheet, about 20 min.
now eat!!
