sweet stuff sunday....
We had slim pickin's as far as ingredients to choose from, since it is almost grocery day, but I came up with a molasses, brown sugar & butter pie!
It was almost like as if a buttermilk pie and a bottle of molasses 'hooked up' and a had a baby. not super sweet, but just enough - and went perfectly with a cup of coffee.....
ingredients:
for the crust -
1 C all purpose flour
1 Tbsp sugar
1 stick butter
1/4 C half and half
for the filling -
1 egg
2/3 C water
1/2 C molasses
1 tsp baking soda
for the topping:
1 1/4 C all purpose flour
3/4 C brown sugar (you can add more if you want a sweeter pie (this was the rest of my bag)
3 Tbsp butter
preheat oven to 375
make crust by whisking 1 C flour, 1 Tbsp sugar together, then grate 1 stick butter into bowl and fluff with a fork....
add half and half and mix until it all will just stick together, and roll out on a floured surface.
fold over and transfer to your pie pan, and press down and cut off any excess.
add any excess pieces to areas where it doesn't quite fit, etc. You will be pouring liquid in this shell, so you want it to be solid...
set aside and make filling....
boil the 2/3 C water, remove from heat and add the 1 Tbsp baking soda. Now beat the egg and add it to the mixture, then the molasses....
Pour into pie dish...
now for the topping....
mix the 1 1/4 C flour with the 3/4 C brown sugar
grate in the 3 Tbsp butter and toss around...
gently pour over the molasses mixture and spread out any clumps so that the entire pie is covered in this mixture...
Bake for 50-55 min.
let cool for about an hour and it's ready to eat!
This is a different flavor and textured pie, but we loved it! It made the house smell divine!
